I'm trying to drop a grade using the Total column in the Grade Center, but it's not working. What do I need to do?

You can only drop grades using Weighted and Average Calculated columns. Unfortunately, there's a bug that makes it appear that you can drop grades using a Total column. The Total column is only meant to sum up other columns; it cannot do any other calculations.
