Sure thing; in fact, we recommend that you rename your course sites to make them more obvious for you and your students. You can do this by following this path in the course site: Control Panel > Settings > Course Name and Description. If you would like to group your courses by semester, it's a good idea to prepend the semester abbreviation to your course name: FA07 - Contemporary Jewish Thinkers, for example.
